At Crown Jewel, we are devoted to the preservation and conservation of rare animals, including one of Great Britain's oldest, most distinct and best known breeds - Highland Cattle. With long, thick, flowing coats and graceful, sweeping horns, these “beautiful, hairy beasties” have remained unchanged over the centuries. Known to have grazed the rugged, remote Scottish Highlands since the sixth century, Highland Cattle are perfect for Cape Breton's climate and terrain. Requiring little shelter or feed supplement to achieve and maintain excellent health, cold weather and snow have little effect on Highlanders. They have been successfully raised as far north as Alaska! Crown Jewel certified organic Highland beef is raised the Old-World way:• Our soil has not seen chemicals for decades. • Fossil fuels and tractors are not used here. Horses and humans do the farm choirs. • The cattle are grass and hay fed. • No supplements and no special finishing techniques. • The herd grazes on large lush pastures to reduce emotional stress. • No medication and/or growth hormones. • The calves are slaughtered at an age of 16-20 months. • The meat is dry-aged for over 14 days to enhance flavours and tenderness and then vacuum packed to ensure extended shelf time. • The result is natural meat for the health and environment conscious consumer. Our meat is a frequent item on the menu of Flavours of Crown Jewel and is also available at selected stores in Nova Scotia. For cooking techniques and recipes please click here.
